Veggie Delightful Sandwich à La Subway

2 sandwiches
ingredients
- 2 hoagie rolls, sliced in half lengthwise
- mayonnaise or mustard, for spreading
- shredded romaine lettuce
- 2 slices swiss cheese (Tillamook of course) or 2 slices cheddar cheese (Tillamook of course)
- 6 slices green bell peppers
- 6 -8 slices cucumbers
- 4 slices red onions
- 2 tablespoons black olives, sliced
- 1 medium tomatoes, sliced
- 1⁄2 avocado, sliced
- 1 tablespoon pepperoncini pepper, slices (optional)
directions
- If you wish, the bread can be warmed first.
- Spread mayonnaise or mustard on each slice of bread.
- Divide and arrange the ingredients equally on both slices.
- Garnish with the onion sauce.
- Place both bread slices together and cut in half crosswise.
- Prep does not include baking the bread if that is what you choose to do. All amounts are estimated.

I've never had the veggie sandwich at Subway but I was craving one for lunch-so I made a veggie "wrap" with what I had! I used some reduced fat feta cheese, cucumbers, red onions, some veggie pepperoni as my choices. I did use pepperocinis, but mine weren't chopped so when I bit into them, it got kinda messy! I topped the wrap with mustard, too, cuz I love the tangy taste. Thank u for sharing this; much cheaper than Subway!!

Very yummy! I like Subway! But I love these and it tastes sooo much fresher! Do not leave off the pepperncini they make it! I addded some of that red store bought hot relish and Olive OIL and a splash of red wine vinegar as well. A keeper! I did add some Avacado because I love it!

I love the veggie delight sandwich from Subway, so I knew I would like this! I used homemade hamburger buns since I had them, pepper jack cheese slices, and no avocado(my husband had eaten it). I also added sweet pickles. Thanks so much for posting!

This was great... I left out the avacado and used a bit of Olive Oil instead of the mayo/mustard and used whole wheat sub rolls (from Wal-mart bakery) but otherwise followed your recipe and it was fantastic. Thanks for the keeper !
